Fishing, One of the Finer Things in Life!



1 pound Salmon fillet — boned/skinned
1/2 cup Dry white wine
1/4 cup Fine W/W breadcrumbs
Non-stick cooking spray
1/2 cup Dried basil
4 Lettuce leaves
1 cup Chopped tomatoes

Cut salmon into 1″ strips. Soak salmon strips in a shallow dish with wine for 1
hour, turning once. Drain. Roll salmon finger in breadcrumbs. Spray a gill rack
and place it on a grid over ashen-hot coals. Scatter rinsed and drained basil
over coals. Grill salmon, turning once with a long-handled spatula. Grill fish
about 4 minutes on each side or until it is done to taste. Salmon will flake
easily when tested with a fork. To serve, place salmon fingers on a salad plate
over lettuce leaves. Spoon on chopped tomatoes next to the salmon.

Serve hot or cold.
